Vegan Dessert with Açai Berry, Raspberry, Banana, Coconut Cream

Acai Berry Banana Dessert Recipe

This easy, scrumptious & elegant, vegan fruit dessert recipe was inspired by samples of acai (ah-sah-EE) berry fruit puree we received from amafruits - super fruits for a healthy lifestyle.

You can find açai berry purée in the frozen food section of natural food stores, or buy them on the amafruits website. They are fantastic in smoothies, and well worth having in your freezer.

Nutrition Data Per Serving, 420 g: 803 calories, 143 g carbohydrate, 27 g fat, 59 mg sodium, 11 g dietary fiber, 5 g protein, low in Cholesterol and Sodium, good source of Manganese. Estimated glycemic load: 70

Ingredients:

  • 2 single packages of amafruits pure unsweetened açai fruit puree
  • 12 ounce package frozen raspberries
  • 1/2 cup unbleached cane sugar, or 1/4 cup raw agave syrup
  • 1/4 cup powdered sugar or 2 Tbsp raw agave syrup
  • 2 cups coconut cream from 2 cans full fat coconut milk, well chilled
  • 4 ripe bananas

Directions:

  • 1. Separate the more solid coconut cream from the liquid in the cans of chilled coconut milk
  • 2. Using an electric mixer, whip the coconut cream with the powdered sugar or raw agave syrup
  • 3. Cover and chill the coconut cream
  • 4. Blend the açai berry puree, sugar or agave syrup, and 1/2 of the frozen raspberries at high speed in a blender
  • 5. Chill the açai-raspberry blend until you're ready to assemble the dessert
  • 6. Place the rest of the raspberries in a strainer set over a bowl to thaw and drain for the topping
  • 7. Assemble in layers in individual glass dessert dishes or cups: 1/4 cup coconut cream, 1/2 cup açai-raspberry pudding, 1 thinly sliced banana, 1/4 cup coconut cream, 1 Tbsp thawed raspberries
  • 8. Serve immediately. Yummmhh!

Cooking Tips: Make this a raw recipe by using raw agave nectar instead of sugar, for both the açai berry pudding, and the coconut cream.

Thaw the packages of açai berry purée and chill the cans of coconut milk overnight in the fridge for best results. Use nicely ripe (spotty but not mushy) bananas. All steps in this recipe, up to assembling the individual servings, can be done several hours ahead of time.

Serve Açai Berry Banana Dessert in small glass dishes or stemmed glasses for a lovely visual effect.
